This recipe was developed by our student team from Loyola University Chicago's Dietetics Internship program.
Ingredients :
4 Large Naan bread
1/2 cup Tomato & Basil pizza sauce
2 Taster packs of Chocolate C's Chipotle BBQ Sauce
1 Cup Sweet Peppers (seeded and diced)
1 Cup Onion (yellow or sweet variety, diced to 1/2 in)
1 Cup Baby Spinach (chopped)
1 Cup Mushroom (sliced)
2 Cups Shredded Mozzarella Cheese
3/4 cup Grated Parmesan Cheese
1.5 Tbsp Dried Basil Leaves
Recipe :
1. Preheat oven to 450F and prep vegetables
2. On each large naan, add 2 tbsp of pizza sauce and spread evenly. Add 1 tbsp Chocolate C’s Chipotle Chocolate Barbecue sauce on top of pizza sauce and spread and blend evenly
3. Add ¼ cup of each vegetable (sweet peppers, onions, spinach, and mushroom) on top of the mixed sauces
4. Add ¾ cup of shredded mozzarella evenly on top of the vegetables
5. Add to oven and bake until edges brown and cheese is thoroughly melted (~15 minutes)
6. Once cooked through, remove from oven and top with 2 tbsp parmesan cheese and 1 tsp dried basil leaves
7. Let cool to 160F before cutting each pizza into fourths, then serve!
